Bitburger Premium Pilsner

Bitburger Premium Pilsner comes to us from Bitburg, Germany.  The brewers at Bitburger source barley from Germany and Champagne, France to make and kiln their malt along with hops grown specifically for Bitburger Brewery that are grown in Holsthum/Eifel Germany to make their amazingly complex Premium Pilsner.  With hints of creamy vanilla, malty grains, light lemon zest and a crisp grassy hop finish, this beer is perfect for warm late summer days and cool fall evenings.  Food Pairings: Creamier dishes like Fettuccini Alfredo or lighter meats like white fish,  chicken or even lightly smoked porks (pork loin or pork shoulder) would work well with this beer.
 
 
Kostritzer Schwarzbier
Bad Kostritz, Germany
Kostrizer Schwarzbier from Bad [bod] Kostritz in Thuringia, Germany is the biggest selling black lager in Germany.  Darker caramel and chocolate malts make this black pilsner a world-class beer while lager fermentation keeps it very approachable and easy- drinking.  With a dark caramel front moving into a molasses and cocoa powder mid- palate, cold fermentation keeps the fruitier flavors of an ale out of this beer while a modest amount of hops give it a wonderfully crisp finish. Food Pairings: Mexican dishes such as Carne Asada or Beef Adobo will pair nicely with this black lager, as will Beef Stroganoff or any other steak or hamburger dish.  The Mexican Beef Adobo has the interesting historic factor of the large number of German immigrants into Mexico and their influence on Mexican Beer Culture. )
 


RECIPES
 
James’ Beer Can Chicken on the Grill
 

  • 1 Whole 3-4# Chicken
  • 1 can Bitburger Premium Pilsner
  • ½ of an Onion
  • 1 Celery Stalk
  • ½ of a Large Carrot
  • 2-3 Cloves of Garlic
  • 3 twigs of Rosemary
 
Pour out ½ can of Bitburger Premium Pilsner into a glass
Carefully remove tab from can of beer (use pliers if necessary, this process can cut you if you are not careful) and widen the mouth of the can with the pliers (if the metal tears a bit this is not a problem just be cautious as the edges of the tears will be sharp).
Insert 2 large or 3 medium sized cloves of garlic, 3 twigs of rosemary (make sure they make it all the way inside the can), ½ onion cut in half (doesn’t need to be fancy just make it fit), 1 stalk of celery cut to fit in the can, and two baby carrots (or about half of a full sized carrot cut to fit in the can). Fit the bottom side opening of 1 medium (3 to 4 lb) size roasting hen over the top of the can (drumsticks should be down, or it should look like the chicken is standing up). Put top rack of grill aside and arrange pre-fired coals in a thick layered circle around the inside of the grill (coals should be laying against the side of the grill all the way around with the center empty). Let grill heat up to about 350* to 375* F.  While grill warms up drink the beer you poured into the glass. Place the chicken on the beer can standing upright in the middle of the ring of coals.  Cook until internal temperature of breasts reaches 170° F.  This will take approximately 75 – 90 minutes.
 
 
Carne Asada
 
Carne Asada is a Mexican recipe for marinated, grilled beef served in tortillas. This is not your run of the mill taco. This is a flavorful and delicious meal that is great for any occasion.

  • 2 pounds skirt steak
  • 12 flour tortillas
  • 1/2 cup tequila
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup orange juice
  • 4 cloves garlic crushed
  • 1 medium onion chopped
  • 2 teaspoons black pepper
  • 1/2 teaspoon salt
  • 1 cup salsa
  • 1 cup guacamole
  • 2 teaspoons Tabasco
Mix juices, garlic, onion, tequila, Tabasco, salt and pepper in a bowl. Add meat and marinate both sides. Cover and refrigerate, turning meat over occasionally. Let steak marinade for 6 to 8 hours.
 
Preheat grill. Place a few drops of water on each tortilla, stack and wrap in aluminum foil. Place on grill. Remove meat from marinade, reserving marinade. Place on grill. Turn steak and tortillas once during cooking. Brush steak with remaining marinade. Cook to your liking (12 to 15 minutes for medium-rare). Cut into thin slices. Place a few slices of steak on each tortilla with salsa and guacamole and serve.
